Hi! Oooh, wee it's hot! My goal is to keep the kitchen cool, minimize hot dishes and move as much of the cooking outside as possible. With guests coming, we'll be grilling burgers, steaks and chicken. Along side I'll be prepping some of my favourites like my Mexican Inspired Street Corn Salad, KFC Copycat Coleslaw and this lemon herb potato salad. All three are from my Summer Salad Cookbook. Just for you, I'll share the potato salad below! More Recipes for the Weekend Green Bean and Basil Salad —beans are basil are a great pairing. I've made it three days in a row and I'm not sorry about it. Creamy Cucumber Salad — sour cream, dill, a splash of vinegar. A lifelong comfort food that goes with everything off the grill. Blueberry Apricot Salad — the blueberries are incredible right now. He may not know it yet, but here are some sides Darryl will be making on the grill: Grilled Zucchini — two minutes per side, Italian seasoning, done. The easiest thing on the grill all weekend. Grilled Corn on the Cob — straight on the grill, no foil required. Sweet, slightly smoky, and the best way to eat corn all summer. Grilled Sweet Potatoes — slice, brush with oil, Cajun seasoning, and grill. Put them on first while you get organized — they take the longest and they're worth every minute. FINAL CALL !! Lemon Herb Potato Salad - Serves 6
Skip the mayo and make this potato salad - it's been a crowd favourite all summer and I keep making it!
Lemon Herb Potato Salad
1 to 1.5 kg (2-3 lbs) baby potatoes
Herb Vinaigrette:
3/4 cup roughly chopped fresh parsley 3/4 cup roughly chopped fresh dill 2 Tbsp chopped fresh chives or green onions 1/3 cup oil 2 Tbsp lemon juice 1 Tbsp lemon zest (optional but so good) 1 clove garlic, minced 1 tsp Dijon mustard 1/2 to 1 tsp granulated sugar 1/2 tsp salt 1/8 tsp black pepper Fresh herbs for garnish Cut potatoes into halves or quarters. Boil until fork tender, do not overcook. Drain and cool slightly.
In a tall beaker, combine parsley, dill, chives or green onions, oil, lemon juice, lemon zest, garlic, mustard, sugar, salt, and pepper. Blend with an immersion blender until well mixed, with some herbs still visible. Taste and adjust sugar, salt, and pepper.
Toss warm potatoes with half the dressing. Add more a little at a time until as saucy as you prefer. Keep extra dressing in fridge for 3-5 days (try it for pasta or grain salad too!). Serve warm or cold.
