What Ireland Reminds Us About Food


When we think of world cuisine, Irish food usually isn’t the first thing that comes to mind. But I just got back from a trip to Ireland and it made me reconsider what makes food truly satisfying.

You don't need trendy recipes or fancy ingredients to eat well.

We had stew, potatoes, chowder, cabbage, carrots and peas, along with some fish and chips. Simple, everyday food made with what's available.

Even the menu displayed for a stately dinner at Muckross House (the kind you'd see on Downton Abbey) included soup, salmon, lamb, potatoes, peas, carrots and strawberry tartlets for dessort. Simple foods made deliciously.

It reminded me that simple seasonal foods work anywhere, anytime!

This is what we ate in Ireland.

We had such a great time, the people of Ireland were so friendly and welcoming, the scenery was green and refreshing and spending time with our adult kids was so much fun.
