Hi Have you ever had a food revelation? A moment when what you thought you knew about a food got turned upside down? For me that happened with corn, back in 1977. Yes, it was that profound that I still remember! We had just moved to rural Manitoba, Canada from a small farming village in Germany. One of the crops we grew in the old country was corn. Field corn for the cows. That summer we were invited to our first summer BBQ at a neighbours where lo and behold, they served corn on the cob. Cow food for people?! That's when my family first discovered sweet corn. We've been growing and loving it ever since! And now, I'm happy to share my favourite tips and recipes with you here. Buy and store: Did you know corn keeps aging after it's picked? The longer you store it, the starchier and less sweet it gets. Easiest way to cook 1-3 cobs: Microwave it with the husk on. Then cut the stem end off and slide the cob out while holding onto the tassel end. Wear oven mitts! Grill it: With the husk or without the husk for more charred bits. Seasoning: add salt after cooking to keep the kernels snappy. Leftovers: cut kernels off the cob and toss kernels into eggs, rice, wraps, quesadillas, grain bowls or soup. Freeze to use another time. Favourite recipes: Corn and Zucchini Fritters - crispy, pan-fried, and a great way to use up extra kernels. Corn Salsa or Corn Salad - corn, tomato, cilantro and a lime-cumin dressing, works as a dip or a side. Zesty Quinoa Black Bean Salad - hearty, make-ahead, good for lunches. Lime, Corn and Cilantro Quinoa - bright and fresh, one of our go-to sides. Chicken Corn Chowder, Lightened Up - one of my kids' favourites My current obsession is the Mexican Street Corn Salad from my Summer Salad book.
