Hello! Here's another tasty Lunch in 15 for you to try. Go grab yourself a sweet potato and some seasoned tuna and you're good to go. If all you’ve ever done with sweet potatoes is mash ‘em for a side dish - get ready for a new meal you’ll want to put on repeat! Stuffed sweet potatoes. Simply microwave (if you want this to be 15 minutes or less) or oven bake sweet potatoes and stuff them with your favourite filling. My friend Leanda put me onto the little tinned tunas that come in different flavours. Darryl likes the Spicy Thai while I prefer the Lemon Pepper flavoured tuna. One can per sweet potato is perfect. Of course, you can use regular tuna or salmon if you wish. Season as you like or make your favourite tuna salad to mix with the sweet potatoes. You could even turn them into tuna sweet potato melts by adding cheese and broiling them. But don't stop at tuna!
