Hello! Are you feeling the January blues? Our forecast for today: Sunny, high of −27°C (−17°F). Wind chill of −47°C (−53°F) this morning, warming up to −39°C (−38°F) this afternoon. At least it will be sunny!😎 I should be sharing soup recipes! But oranges make me happy and I still have plenty to use up, so they're making an appearance in this week's Lunch in 15. I turned my Fresh Citrus Salad into a protein and fibre rich lunch by adding barley and chicken. Adding whole grains and your favourite protein source is a quick and easy way to turn your favourite salads into a satisfying, filling meal. Not to mention it's a great way to use up what's in your fridge. To turn a salad into a grain bowl add these three things: 1. Hearty Whole Grains: Try bulgur, barley, quinoa, wheatberries, brown rice, wild rice, etc for added fibre and nutrients that will keep you satisfied longer. How to cook and use whole grains. PRO TIP: Cook extra whole grains and freeze for quick, easy meals.. 2. Protein: Try roasted or cooked meats, tofu, edamame or beans to power up your bowl. Choose one or a combination. 3. Crunch & Flavour boost: Add crunchy texture, colour and extra flavour bits to really charge up your bowl! Think toasted nuts and seeds, different cheeses, dried fruit, fresh herbs, bacon bits, roasted chickpeas, etc. You're ready to build your own, or try one of these:
