Hello! Did you enjoy cucumber month as much as I did? I tried cucumber raita and creamy cucumber dressing for the first time. I mention both in this YouTube short - the creamy cucumber dressing recipe is in the description. In case you missed some info, here's a recap of some of the key questions I answered during cucumber month. Why are cucumbers wrapped in plastic? It’s for protection, not hygiene. English cucumbers have thin, tender skins, which makes them more delicate than field cucumbers. New edible coatings are coming to market - but not everyone loves those either! Watch on YouTube. Why don't cucumbers last longer? Cucumbers are mostly water, which makes them quick to spoil. Add that thin skin on English and mini cucumbers, and they have even less natural protection. What's the best way to store cucumbers? Moisture and cold are the two things to manage: How do you re-crisp soft cucumbers? Give them an ice water bath for about 30 minutes (longer for whole mini cucumbers). They'll get their crunch back. If you soak slices - eat them right away, they won't store well. Watch on YouTube.
